Mixology: Beyond the Shaker?
Making a cocktail is easy. Making a really good one is a different story.
This is not a class where you’ll simply follow three recipes, shake, garnish and drink. Together with an experienced cocktail expert, we’ll spend an evening tasting, experimenting and getting properly under the skin of what makes a great cocktail work.
We’ll start with the fundamentals – but go well beyond the basics. You’ll explore how spirit, sweetness, acidity, bitterness, aroma, texture, temperature and dilution interact, and more importantly, you’ll taste the differences for yourself.
What happens when you change the sweet-to-sour ratio of exactly the same drink? How much dilution does a cocktail actually need? Why does shaking create a different result from stirring? What do bitters, vermouths and amari contribute beyond flavour? And how can tiny adjustments turn a drink from perfectly fine into seriously good?
Throughout the evening, we’ll mix these questions with hands-on experiments and side-by-side tastings. Rather than being told that something makes a difference, you’ll be able to taste what changes, why it changes and how to use that knowledge yourself.
We’ll also venture further into modern mixology, exploring infusions, clarification, fat washing, foams and other techniques used in contemporary cocktail bars. Some we’ll work with ourselves, others we’ll taste and dissect – always with the same question: does the technique actually make the drink better?
And then we take the recipes away.
Working in small teams, you’ll develop your own cocktail with guidance from our expert. You’ll build a first version, taste it critically and learn how to troubleshoot it: too sweet, too sharp, too boozy, too flat, too much going on? Adjust, taste again and refine until the drink comes together.
It’s part cocktail workshop, part guided tasting and part flavour lab – with plenty of excellent drinks along the way.
You won’t leave with just a handful of recipes. You’ll leave understanding how cocktails are constructed, how to taste them more analytically and how to start creating and adjusting drinks yourself.
